The first thing I thought about when I made these bites was “Wow, my dad would really like these.” He loves pecan pie. Like for as long as I can remember, that is always the pie that we got him for his birthday, it was always his jam during the holidays, and just always makes me think of him! I’m sure he would love that (haha) But really, I would make these for him all of the time if I lived close to my parents still! Because these are a bit healthier than the actual pecan pie ;) With that being said, if you love pecan pie then you will love these too! They have just enough of a sweeter side to them but still that deep pecan flavor to them. I will probably be making these around Thanksgiving every year. Pecan pie & Thanksgiving just go together right?
½ cup rolled oats
1 cup pitted dates
1 cup pecans
1 scoop collagen peptides (optional)
1 tbsp maple syrup
1 tbsp nut milk
1 tsp Cinnamon
1 tsp nutmeg
1/2 cup dark chocolate chips
1 tbsp melted coconut oil
Blend up oats in food processor
Add in remaining ingredients besides for maple syrup
Blend up & then add in maple syrup
Let the mixture sit in the fridge for 30 minutes or so.
Roll into balls!
Melt chocolate & dip bites! I only did a little chocolate on the top but you could completely cover to form a truffle, drizzle or whatever you like! I also topped it with some sea salt :)
Store in the fridge for a week!
