If you like carrot cake, you'll love these! They are the perfect amount of coconutty/carrot that you need for a bite size snack! I made these because my mom loves carrot cake & she approved of them! You'll be making a lot of trips to the refrigerator for these guys! They are also really good frozen as a snack too— I actually think my favorite is to have them in the freezer! I'll have these as a snack, top on a smoothie or yogurt bowl. So many options and always so good.
Recipe note: optional to use 1 c. almonds instead of the split 1/2 almonds & 1/2 walnuts. You can also roll them in shredded coconut flakes or hemp seeds!
1 c. dates
1/2 c. almonds
1/2 c. walnuts
1/3 c. shredded carrot
1/3 c. shredded unsweetened coconut
1 tbsp. maple syrup
Add dates & nuts to the food processor and blend
Add remaining ingredients & blend
Put mixture in the fridge for 20 minutes
Roll into balls! & store in fridge or freezer!
Optional: roll in unsweetened coconut flakes & hemp seeds
