If you want a little something sweet, this is it! Plus it’s SO easy which makes it even better and all you need are four ingredients! I love using my cast iron skillet for this dish, but you can use any pan that you have. This is another dish that you can prep at the beginning of the week and just leave off the coconut butter until you’re ready to eat it. Store it in the fridge and pull it out whenever you’re wanting a little something sweet. And if you don’t like coconut butter, do any kind of creamy nut butter, I’m sure it’s just as good ;) Hope you love!
2 sweet potatoes
1 honey crisp apple
2 tbsp vanilla ghee (I use Fourth & Heart)
Coconut Butter (however much your heart desires)
Cut up sweet potatoes & apples in cubes
In skillet, heat up ghee on medium to low heat
Place sweet potatoes in the skillet first as they will need more time to cook through. Once they are fork tender, add the apples. Top with cinnamon and mix around.
Drizzle with coconut butter if eating immediately
