Homemade Plantains

These may be my new favorite. snack! They’re perfect when you want a little something sweet and savory (which for me is most of the time haha). I’ve had a few moments while making plantains (i.e. forgot about them and completely burned the whole pan & just not really knowing what the best time to cook them was to get them the best. I particularly love pairing them with a bunch of homemade guacamole. It’s such a delicious combo!! I’ll also use them throughout the week to put on bowls, etc. Think Mexican night!! I hope you love them as much as I do!

Recipe note: Make sure you have a liner on your pan or have sprayed it with olive oil in order to prevent the plantains from sticking to the pan. And set a timer so you don’t forget to flip! They will burn easily.

Ingredients:

  • 4-5 plantains

  • 2-3 tbsp olive oil or avocado oil (make sure they are coated)

  • Sea salt/pepper

  • 1 tsp garlic powder

Directions:

  1. Preheat the oven to 400 degrees

  2. Cut the plantains in thin slices. Coat in olive oil, sea salt & pepper.

  3. Bake for 15 minutes & then flip and bake for another 15 minutes. Then do another 5-10 minutes, flipping half way through. Keep an eye on them throughout!
