Pesto Asparagus Orzo

Spring time calls for all of the pesto flavors and this Pesto Asparagus Orzo is so simple and a perfect spring dish to make! This comes together in less than 30 minutes and made with a few simple ingredients. Pair this as a side salad or top with protein to make into a balanced meal.

I’m always looking for new ways to use these ingredients! They are some of my favorite and now is the time to use them as they are in season right now. I love this orzo because it’s great warm or cold as leftovers the next day. You can also use this as a side dish or add protein to make it into a balanced meal. Some of my favorites to add with this is salmon, grilled chicken or chicken sausage.

This orzo comes together in less than 30 minutes and a recipe that everyone will enjoy!

What you need to make Pesto Asparagus Orzo:

  • Orzo
  • Pesto
  • Asparagus
  • Sun-dried tomatoes
  • Fresh Basil
  • Crumbled Feta or Goat cheesse
  • Sea Salt
  • Black Pepper
  • Garlic Powder
  • Extra Virgin Olive Oil

How to make this orzo:

  1. Start by cooking orzo according to package.
  2. In a pan, heat up avocado oil. Add chopped asparagus and lightly season with sea salt and pepper. Saute until fork tender.
  3. In a large bowl, add orzo, cooked asparagus, sundried tomatoes, fresh basil, spices and pesto. Mix together to combine.
  4. Add crumbed feta if you want!
  5. Enjoy!

It’s best to keep any leftovers in a sealed container in the fridge. I like using these for easy fridge storage!

If you want to switch this up, try doing this instead:

  • Top it with protein like chicken or salmon!
  • Serve it as a side with a turkey wrap or sandwich

You can do either! The first time I make it, I like to enjoy it warm. Then I will serve it cold after that and it’s just as delicious.

Ingredients

  • 2 cups orzo, cooked
  • 1/3 cup sundried tomatoes
  • 2 tbsp fresh basil
  • 2 tbsp crumbled feta
  • 1/3 cup pesto
