Southwestern Pasta Salad

I can’t get over the flavors in this pasta salad. This may be a new favorite of mine to make because who doesn’t love a little Mexican flavors with pasta!? Plus, this southwestern sauce that I made using Siggi’s Dairy is the perfect amount of creaminess with a little kick in it. You can make a big batch of this to prep for the week or even take for a cookout—you name it! I personally think this would be delicious served with something on the grill or even mixing in some protein with it.

I used a gluten free pasta here but you can use any type of pasta that you like. I also love using chickpea pasta for recipes like this!

Ingredients:

  • 1 box of pasta (I used a gluten free pasta here)

  • 1/2 cup black beans

  • 1/2 cup chopped tomatoes

  • 1/2 red onion

  • 1 corn on the cob

  • 2 tbsp cilantro

  • Siggi’s Southwestern Sauce: 1/2 cup siggi’s plain yogurt, 1 tbsp olive oil, 1 juice of lime, 1 garlic clove (minced), 2 tbsp sriracha, 1/4 tsp chili powder, pinch of cumin, pinch of paprika, salt & pepper to taste

Directions:

  1. Add all ingredients to make southwestern sauce. Set aside.

  2. Cook box of pasta according to package.

  3. Cook corn on the cob.

  4. Add all the ingredients in one bowl. Pasta, black beans, tomatoes, red onion, corn, cilantro and all of the southwestern sauce.

  5. Store in the fridge for the week.

  6. Enjoy!
