Summer Quinoa Salad

This quinoa is super easy & so delicious! Now all of the other ways that I make quinoa are boring compared to this one. I used the spinach basil hemp seed sauce that I had been using on pasta and just added it in with quinoa to make for a yummy side to any meal. I paired this throughout the week with chicken, added it on salads, or just ate a big bowl of it. This is light & refreshing too which I love for this hotter months. 


  • 1 cup quinoa
  • Tomatoes
  • Cucumber
  • Feta cheese
  • Spinach basil hemp seed sauce: 1.5 c. spinach, 1 c. fresh basil, 1/4 c. hemp seeds, 1/4 c. extra virgin olive oil, juice of 1/2 lemon, 2 garlic cloves, salt & pepper


  1. Cook quinoa according to package 
  2. Add all of the ingredients in the food processor the spinach basil hemp seed sauce. 
  3. Combine cooked quinoa, tomatoes, cucumber, feta cheese & spinach basil hemp seed sauce together & mix together.
