This quinoa is super easy & so delicious! Now all of the other ways that I make quinoa are boring compared to this one. I used the spinach basil hemp seed sauce that I had been using on pasta and just added it in with quinoa to make for a yummy side to any meal. I paired this throughout the week with chicken, added it on salads, or just ate a big bowl of it. This is light & refreshing too which I love for this hotter months.
- 1 cup quinoa
- Feta cheese
- Spinach basil hemp seed sauce: 1.5 c. spinach, 1 c. fresh basil, 1/4 c. hemp seeds, 1/4 c. extra virgin olive oil, juice of 1/2 lemon, 2 garlic cloves, salt & pepper
- Cook quinoa according to package
- Add all of the ingredients in the food processor the spinach basil hemp seed sauce.
- Combine cooked quinoa, tomatoes, cucumber, feta cheese & spinach basil hemp seed sauce together & mix together.
