Salmon Bowl with Creamy Avocado Cilantro Sauce

This bowl is one of my favorites & I think a lot of it has to do with this creamy avocado cilantro sauce on top! This will definitely be something that I prep often to have & use for anything! I'm sure it would be delicious with chicken, meat--you name it! One thing I love about sauce is that it can take a dish from 0 to 10 real quick. I also love that making them at home allows you to know what's going in it and there isn't anything funky. Make this for your next simple dish & let it take the flava to the next level. 

Ingredients: 

  • 1/2 cup cilantro
  • 1/2 avocado
  • 1/4 cup plain yogurt (I use siggis)
  • 1/4 cup extra virgin olive oil
  • 2 tbsp water
  • salt & pepper
  • Salmon
  • Sweet potatoes 
  • Broccoli

Directions: 

  1. Set oven to 400 degrees & roast sweet potatoes & broccoli for 30 minutes. Keeping an eye on them & flipping half way through
  2. Combine all of the ingredients for avocado cilantro sauce in the food processor (cilantro, avocado, yogurt, olive oil, water, s&p). Set aside
  3. Broil salmon on high for 17 minutes 
  4. Combine in bowl with salmon, sweet potatoes, broccoli & sauce
