Pesto Shrimp Pasta


This pasta is one that I make on a regular basis! I love pesto, so put it with a bowl like this and it’s the ultimate comfort meal. Plus this makes a bunch, so you can even have leftovers! My mom makes a pasta salad like this, so I had to recreate something similar. I think she would approve :) If you love pesto as much as I do, then you will love this! And like a lot of my other recipes, the time it takes to put this together is very minimal.


  • 1 box Eat Banza pasta

  • Asparagus

  • Avocado Oil

  • ½ lb fresh shrimp

  • Trader Joe’s Vegan, Kale, Cashew & basil pesto

  • Sundried tomatoes

  • Parmesan cheese (optional)


  1. Cook pasta according to package

  2. Cut up asparagus and saute on stove with a little avocado oil (I also like to use the Chosen Foods Avocado Oil Spray)

  3. Cook shrimp in a separate pan with a little sea salt & pepper

  4. Once everything has finished cooking, mix it all together with the Trader Joe’s Vegan Kale, Cashew & Basil pesto

  5. Top off with parmesan cheese
