LOVE all the flavors happening in this bowl! There’s something about a Mediterranean bowl that hits the spot every time! One of my favorite things to do is to find these meals that you love getting when you are at restaurants and taking that to recreate it at home! It allows you to be creative and then saves money because you aren’t going out all the time! I had all these ingredients prepped for the week so I could assemble bowls like this easily throughout the week.
Organic chicken nuggets
Red pepper flakes
Saute chicken with a little avocado oil & adobo seasoning
Mix chickpeas in a bowl with olive oil, sea salt, pepper, cayenne pepper, chili powder & red pepper flakes. Roast in the oven at 400 degrees for 25-30 minutes
Cook quinoa according to package
Layer all ingredients into a bowl: Mixed greens, chicken, olives, feta cheese, quinoa, roasted chickpeas
Top off with red pepper flakes & a dollop of hummus
