Homemade Chicken Fingers & Sweet Potato Fries


These are a classic! Who doesn’t love chicken fingers and fries!? I wanted to put a healthier spin on a classic and these came out so good! Definitely a great meal if you have kiddos--they won’t even notice the difference ;) I decided to use one of my favorite boxes of crackers (Simple Mills--love all the flavors) and use that as the “breading” for the chicken fingers. You could use any cracker here, but I definitely recommend these! This meal is perfect for a lunch or dinner. The whole family will love it! And it will satisfy that chicken finger craving that I am sure you get.


  • 1 c. Simple mills black pepper crackers

  • Organic chicken tenders (I bought the already sliced tenders)

  • 1 egg

  • Sweet potatoes

  • Avocado

  • Hummus

  • Primal Kitchen Foods Honey Mustard dressing

  • Mixed greens

  • Fresh cilantro

  • Red pepper flakes


  1. Throw 1 cup of crackers into the blender and blend up

  2. Create a bowl for the crackers and a bowl with one egg

  3. Coat chicken fingers in egg and then roll into crackers

  4. Do repeatedly for each chicken finger

  5. Set oven to 400 degrees and bake for 30 minutes (flipping half way through). Time may vary depending on size of chicken fingers

  6. Cut sweet potatoes in fries & bake at 400 for 30-40 minutes (flip halfway through)

  7. Create a bowl with mixed greens, chicken fingers, sweet potato fries, avocado w/hummus inside

  8. Top bowl with red pepper flakes & fresh cilantro
