Harvest Kale Salad
I love all salads! It’s one of my favorite things to get when I go out to eat because 1) they are all so different 2) sometimes it’s the only healthy item that you can find & yet modify as well. This was similar to one that I found at one of my favorite spots back home, so I knew I had to recreate it. Another thing I love about the bowl is all the colors! How can you not feel like you’re eating good when it is this colorful!? And also so delicious. I had these on repeat when I made them! For dressings, I usually keep it pretty simple and just use a little extra virgin olive oil with juice of a lemon, sea salt & pepper. I don’t like to use store bought dressings because they are usually filled with junk, but I have a few that I love like Primal Kitchen Foods (Honey mustard, ranch, balsamic vinaigrette!
Cook quinoa & farro according to package
Saute chicken in cast iron skillet with avocado oil & adobo seasoning
Preheat oven to 400 degrees
Roast sweet potatoes for 20-30 minutes (flipping halfway through)
Layer everything into the bowl: kale, chicken, pumpkin seeds, beets, sweet potato, quinoa/farro mix, beet chips & avocado
