I'm all about these "salads" for lunch. They make for an easy lunch, can be prepped ahead of time & so delicious! This avocado egg salad is one of my favorites. Top it on an english muffin, in a sandwich or on a salad. This requires only a couple ingredients too which are usually staples for me in the kitchen. Having things like this on hand means that you always have a go-to when you're running low on food in the house or not sure what to whip up for lunch.
- 2 hardboiled eggs
- 1/2 small avocado
- 1 tbsp mayo made with avocado oil (I use primal kitchen foods)
- Salt & pepper
- Red pepper flakes
- Make two hardboiled eggs & cut up
- Add in a bowl with avocado, mayo, salt & pepper, & red pepper flakes
- Top it on toast, in a salad or eat with crackers or veggies!
