I make chicken salad a lot over here! It’s easy & delish for during the week! I like having something like this prepared for the week so I can quickly throw together lunch if I need to. I usually just throw everything in a bowl but thought I’d actually get a recipe up for you guys since it’s such a regular over here!! I love switching it up with how I serve it too. Sometimes I’ll make it in a salad, make it into lettuce wraps, on a sammie or even on sweet potato toast is so good!! A great way to prep for the week is to make some crockpot chicken and shred it to use a variety of ways. This is just one of the ways that I like to use it. Hope you love!
2 shredded chicken breasts
2 tbsp mayo made with avocado oil (I use Primal Kitchen)
1 1/2 tbsp dijon mustard
1/2 tsp garlic powder
1/4 cup chopped celery
1/2 cup halved grapes
1/4 cup slivered almonds
Optional: add 1/2 lemon juice & fresh dill
To make the chicken prior, combine chicken breasts in the crockpot with a little chicken broth. Cook on high for 4 hrs or low for 6 hrs
Combine all of the ingredients into a bowl.
Store in fridge for the week. Serve however you like!
