I love prepping chia pudding to have for the week. It’s perfect when I need a quick breakfast or even want something to snack on. The best thing about it is that you can prep it the night before to have ready in the morning or even throw together in the morning, get ready for what you need to and then by the time you’re ready to leave the chia seeds have most likely soaked up the nut milk. I do this a lot since I forget ;)
I like this Banana Coconut combo because it doesn’t have any sugar and has a good flavor to it. You can definitely sweeten it up by adding in a little maple syrup, honey or vanilla extract. All of these will mix well in the chia pudding! I like to keep the base of it pretty simple and then add the toppings in like fruit, nut butter, granola, hemp seeds to make it all come together.
1/4 cup chia seeds
1 c + 2 tbsp nut milk (I use unsweetened almond milk)
1/4 cup mashed banana
2 tbsp unsweetened coconut flakes
Cinnamon, sea salt
optional: collagen peptides
Combine all the ingredients into a mason jar and mix together.
Place in the fridge for 20-30 minutes or overnight.
Top with desired toppings!
