Oatmeal has always been a favorite of mine for breakfast. I love it because it keeps me full and is so satisfying!! The options are endless as far as toppings too. I feel like I’m pretty standard with the ones I choose: bananas, berries, almond butter & hemp seeds. So good! You’ll usually see me having overnight oats if I need to get somewhere in the morning and need to take breakfast on the go ( I have a few recipes on my site for that as well).
The key to the creaminess of these oats was the addition of unsweetened coconut milk. I’m talking about the one in the can (this is the one that I used). They were SOOO creamy.
1/2 cup rolled oats
1/2 cup nut milk (I used unsweetened Malk Almond Milk)
1/3 mashed banana
2 tbsp unsweetened coconut milk (the top thick part of the can—this is what I used) you can omit this if you don’t have it, just takes the creaminess up a notch!
Optional: a dash of vanilla extract or maple syrup if you want a little sweetness!
Toppings: Banana, Blueberries, hemp seeds, Almond Butter
Combine the rolled oats, nut milk & cinnamon on medium to low heat.
Stir continuously and add in the banana. Continue to stir while completely mashing the banana.
Once starting to thicken, add in the 2 tbsp coconut milk & stir. Remove from heat.
Pour in bowl and top with desired toppings!
