Pumpkin Pie Overnight Oats


Combining pumpkin with my favorite, overnight oats, seemed like a good idea ;) these are the perfect thing to make when you want something quick or take it on the go with you in the morning! There’s something about the cooler weather that makes me want everything pumpkin. Anyone else!? If you love pumpkin & overnight oats, then you will love these!

Ingredients: (serves 2)

  • 1 cup rolled oats

  • 1 cup nut milk

  • 1 tbsp almond butter

  • 2 tbsp chia seeds

  • 2 tbsp pumpkin puree

  • 1-2 tbsp yogurt (I like using vanilla coconut yogurt)

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1 tsp maple syrup

  • 1 1/2 tsp pumpkin pie spice


  1. Combine all ingredients into a jar and store in fridge overnight

  2. In the morning, top with blueberries, nut butter & crushed walnuts

  3. Enjoy!
