My overnight oat obsession continues with these! I don't eat mango very often, but picked it up a the store and it was so good! Soaking up that last little bit of summer fruit that I can. Also, funny story behind making these oats...I never intended on making these, but I went to cut the mango and just destroyed it. Like why is it so hard to cut a mango!? And so it wasn't really even snackable in the way I was wanting it to be and more in shreds, so I just decided to use the little bit that I got from it to make into these oats! haha maybe next time I will have better luck cutting into one. I should probably Google that. Anyways, here's what ya need!
- 1/2 c rolled oats
- 1/2 c almond milk
- 1 tbsp chia seeds
- 1/4 c mango
- 1 tbsp vanilla coconut yogurt (could also use regular yogurt)
- 1/4 tsp vanilla extract
- toppings: banana, hemp seeds, coconut & nut butter
- Combine all the ingredients into a jar and store in fridge overnight
- In the morning, top with desired toppings!
