This is the dreamiest breakfast bowl!! Don't knock it till ya try it ;) if you haven't added sweet potatoes to your breakfast bowl, you're missing out! Chia pudding is a great thing to prep for the week too! I've been loving prepping a big batch of this and then having some for breakfast or a snack when I want it. It also keeps you full & satisfied for a long time which I love! Feel free to switch this up based off what fruit you like, etc.
- Roasted sweet potato
- Chia pudding-- 3 tbsp. chia seeds, 1/4 c. coconut yogurt ( I use Culina), 1/2 c. almond milk
- hemp seeds
- Nut butter
- Bee pollen
- First prepare the chia pudding by combining all ingredients: Chia seeds, coconut yogurt, and almond milk. Let it sit in fridge for 1-2 hrs or can be prepped to have ready in the morning
- Roast the sweet potato at 400 degrees for 30 minutes. Flipping half way through.
- Combine in bowl with chia pudding, sweet potato, banana, blueberries, hemp seeds, and nut butter
