Egg Muffins

If you don't have time to prep anything for the week, just do these! They are perfect for a quick breakfast or a snack and they come together in just a few minutes. Every time I make them, I try to switch up the veggies or I'll add in another protein like turkey bacon or chicken sausage. If you're not a morning person and breakfast is usually the quickest thing you can find, then make these be that! Making a batch will last for the week and they come packed with protein, keeping you full until lunch. 


  • Spinach
  • Red pepper
  • Mushroom
  • Breakfast sausage
  • 8 eggs


  1. Set oven to 375 degrees
  2. Chop up all the veggies that you are using to add in the muffins
  3. Whisk 8 eggs and add in all chopped ingredients
  4. Pour evenly in each muffin cup
  5. Bake for 15-18 minutes
