Banana Chocolate Chip Muffins

The easiest muffins to make for breakfast or a quick snack! Is it just me or do you love when you have some bananas that are ripe and need to be used asap!? For me, it gives me an excuse to make something yummy like banana bread or muffins like these. What I loved about these is that you only need a couple ingredients! I was loving them topped with lots of nut butter, in yogurt bowls, or just eaten on the go. I made these and kept some in the fridge to have for the week and put the rest in the freezer!

Ingredients:

  • 3 c. rolled oats
  • 1 tbps. Maple syrup
  • 1 c. mashed banana
  • 2 eggs
  • 2 cups almond milk
  • Splash of vanilla extract
  • Dark chocolate chips

Directions:

  1. Preheat oven to 350 degrees
  2. Combine all ingredients in a bowl & mix
  3. Pour equal amounts into a muffin pan
  4. Bake for 23-25 minutes
  5. Best when topped with nut butter!
