This has all the fall flavors that I love in it! Is there anything better than a honeycrisp apple!? They’re my favorite whether I’m snacking on them with some PB or even better in this oatmeal bake. I love pairing this with some fruit & yogurt at breakfast or even as a little dessert at night. I’ve mentioned before but I love using Further Food Collagen Peptides daily. 2 cup rolled oats
2 honeycrisp apples
3 scoops Further Food Collagen Peptides
1/3 cup raisins
1/3 cup pecans
1 1/2 cup unsweetened vanilla coconut milk ( I used So delicious but any nut milk would work)
1/4 cup maple syrup
1/2 tsp vanilla extract
1 tbsp coconut oil
1 tsp baking powder
1 1/2 tsp apple pie spice (I used Primal Palate)
1 tsp cinnamon
In one bowl combine all the dry ingredients: rolled oats, collagen peptides, baking powder, apple pie spice, & cinnamon
In another bowl combine wet ingredients: eggs, maple syrup & nut milk
Preheat oven to 375 degrees.
In a casserole dish, put 1 tbsp of coconut oil to cover the bottom of dish
Peel skin off apples & cut into small pieces. Layer at the bottom of the dish.
Combine dry & wet ingredients together in the bowl & mix together well. Pour mixture into casserole dish to completely cover the apples.
Top with pecans & raisins
Cook for 35-37 minutes or until brown around the edges
