Apple Pie Oatmeal Bake

This has all the fall flavors that I love in it! Is there anything better than a honeycrisp apple!? They’re my favorite whether I’m snacking on them with some PB or even better in this oatmeal bake. I love pairing this with some fruit & yogurt at breakfast or even as a little dessert at night. I’ve mentioned before but I love using Further Food Collagen Peptides daily. Ingredients:

  • 2 cup rolled oats

  • 2 honeycrisp apples

  • 3 scoops Further Food Collagen Peptides

  • 6 eggs

  • 1/3 cup raisins

  • 1/3 cup pecans

  • 1 1/2 cup unsweetened vanilla coconut milk ( I used So delicious but any nut milk would work)

  • 1/4 cup maple syrup

  • 1/2 tsp vanilla extract

  • 1 tbsp coconut oil

  • 1 tsp baking powder

  • 1 1/2 tsp apple pie spice (I used Primal Palate)

  • 1 tsp cinnamon

Directions:

  1. In one bowl combine all the dry ingredients: rolled oats, collagen peptides, baking powder, apple pie spice, & cinnamon

  2. In another bowl combine wet ingredients: eggs, maple syrup & nut milk

  3. Preheat oven to 375 degrees.

  4. In a casserole dish, put 1 tbsp of coconut oil to cover the bottom of dish

  5. Peel skin off apples & cut into small pieces. Layer at the bottom of the dish.

  6. Combine dry & wet ingredients together in the bowl & mix together well. Pour mixture into casserole dish to completely cover the apples.

  7. Top with pecans & raisins

  8. Cook for 35-37 minutes or until brown around the edges
